If you go to a Tapas bar they will do a take away for you mine does and i must say it is so much easier. Tapas is such hard work having to do lots of different dishes, so buy the cooked dishes and buy the hams, cheese etc from the supermarket.
Chop and fry an onion. Chop two medium sized potatoes into cubes and then deep fry until crisp and brown. Break 5 eggs into a bowl and beat. Add the onions and the potatoes to the beaten egg stirring continuously to avoid it setting. Add salt to taste. Empty the contents into a frying pan preheated to a moderate heat and cook until solid. Use a plate to turn the omelet upside-down and place back into the pan to cook the other side.
Et voila!
Of course you can vary the amount of eggs and ingredients to make a bigger one. Or you can even put extra ingredients in such as little bits of chorizo or fried mushrooms.

I slightly disagree about the frying process. We just fry enough to soften the potatoes (and the onion if you really must have it). Crispy and brown doesnīt do anything in a tortlilla in my opinion. Now for an English Breafast, thatīs another matter :)
Let the potatoes (and onion) cool before adding the beaten eggs. That way you sonīt have to stir so much. "Cook until solid" ? I like mine a bit juicy in the middle !
Without onions, Chris? Are you crazy? The onions are the best bit. I love the texture of them in my mouth compared to the potato and the egg. Have you tried making it with chorizo? I've bought sliced chorizo and chopped it up into little bits before adding, it's lovely (especially if you use dulce).
Add the flavourings of your choice (mushroom and ham is my favourite). Roll into balls and gently squeeze to compact. Roll in bread crumbs (buy tostatas and blitz). Deep fry.
